Lately I've been having some serious cravings for breakfast burritos.

There's just something about a crispy tortilla wrapped around that cheesy eggy goodness with hints of bacon and veggies that gets me every time.

Not to mention that once you have them all prepped and ready to go, they make for the easiest meal EVER!

They really are the true definition of 'grab and go' and can save so much time on those busy mornings!

This recipe consists of every day ingredients that you may already have on hand!

  • Red pepper
  • Back bacon
  • Eggs
  • Milk

Healthy Breakfast Burrito Variations, Substitutions, and Add-Ins

  • Protein: Sub in regular or turkey breakfast sausage for the back bacon; add cooked black beans
  • Veggies: Add or sub in cooked diced sweet potato or tater tots, spinach, or diced tomatoes
  • Flavour add-ins: Add cilantro or some hot sauce or spices to the egg mixture
  • To make gluten-free: Use gluten-free wraps instead of whole-grain
  • To make dairy-free: Use almond milk instead of cow's milk and dairy-free cheese instead of regular cheese or leave out the cheese out altogether
  • To make vegetarian: Leave out the bacon or sub in black beans

How to Meal Prep Breakfast Burritos

Over medium high heat, heat one teaspoon of the oil. Cook the red pepper until fragrant, about 5 minutes. Add the diced bacon and cook for an additional 3-4 minutes, stirring frequently. Set mixture aside in a bowl or on a plate.

In a medium bowl, whisk together the eggs, milk, salt and pepper.

In the same pan, heat the remaining teaspoon of oil over medium high heat. Add the egg mixture to the pan and cook until mostly set, stirring frequently, about 5-6 minutes. It should resemble scrambled eggs.

Remove the pan from the stove. Add the red pepper mixture and green onions to the pan with the eggs and mix to combine. Allow the mixture to cool to room temperature.

Next, evenly distribute the egg mixture down the centre of six tortillas, leaving about an inch around the edge to fold in the ends.

Sprinkle evenly with cheddar cheese. Roll up the burritos tightly, tucking in the ends.

How do you fold a burrito?

You can fold a burrito in three simple steps!

Step 1: Add the fillings to the bottom half of the tortilla. Fold the bottom of the tortilla up and over the filling, pushing the filling back toward the bottom third of the tortilla.

Step 2: Next fold the tortilla towards the filling on either end of the large fold. The filling should be contained inside the fold.

Step 3: Roll up the burrito. As you go, use the tips of your fingers to tuck and press the filling into a compact cylinder to ensure that none of the filling falls out.

Once the burritos are all assembled, you can either heat them right away or freeze for later!

To heat, lightly coat a frying pan with a bit of oil and set the heat to medium.

When the pan is hot, add the burritos, seam side down.

Cook, covered, until the bottom of the burritos are golden brown, about 3-4 minutes.

Yes! That's one of my favourite things about these burritos.

Once you've assembled the wrap and fillings, roll up and wrap each burrito with tin foil. Place in the freezer for up to three months.

How to Reheat Freezer Breakfast Burritos

There are a couple of different ways to reheat these breakfast burritos. My personal favourite way is to reheat them in the oven because the outside gets nice and crispy and they tend to heat through more evenly.

There's just something about biting into a crispy burrito filled with egg and cheesy goodness.

It takes a bit longer to reheat but it's totally worth it.

But just in case you want a couple of options, I've provided both methods below:

Oven method: Preheat the oven (or toaster oven) to 400 degrees F. Place the burritos wrapped in foil on a baking sheet. Bake for 30-40 minutes or until the tortilla is lightly browned and crispy and the fillings have heated through.

Microwave method: Unwrap the burritos from foil and place in the microwave for 1-2 minutes or until heated through.

How do you keep breakfast burritos from getting soggy?

Once you've cooked the filling ingredients, allow them to cool to room temperature before filling the tortillas to prevent the burritos from getting soggy.

Tips to make Breakfast Burrito Meal Prep Easier

  • Do not overfill the burritos or they will be tough to roll up.
  • Be sure to freeze the burritos after assembling them; not after the burritos have been cooked on the stove.
  • I find the best way to reheat these burritos from frozen is in the oven since they tend to get warmed through more evenly than reheating in the microwave.
  • Be sure to wrap the burritos in foil if reheating in the oven because otherwise the tortillas may get dried out.

  • 1 medium red pepper diced
  • 1 cup diced back bacon
  • 8 eggs
  • 1/4 cup milk

  • 1 cup shredded cheddar cheese
