I accidentally created this recipe when trying to create some fajitas for dinner (using a roast I got marked down for CHEAP -of course). I say this is a cross between a roast and fajitas… all tucked nicely in your crockpot.

It will not taste like your normal roast and potatoes, and it is so light that you could eat this as the weather warms up!! (Crockpot in the summer… I'll take it!)

If you are in the market for something new, I really love my Ninja cooker. The nice thing about this is you can brown the meat in the same slow cooker.

It is so handy to just have the one pan to clean. It has become of my favorite kitchen appliances.

It is not necessary to brown the roast prior to cooking. However, some people prefer this texture so you can certainly do this if you would like.

This is another reason I love my Ninja cooker because you can brown the meat in the crock pot and not dirty up a bunch of pans. It makes it so easy.

Why is my crock pot roast tough?

The longer meat cooks in the crock pot the more tender it becomes. If the meat is tough, you probably need to cook it longer.

Easy Crock pot Roast Beef with Peppers

  • 1 roast about 3 lbs is what I used
  • 1 green bell pepper sliced or more if you want
  • 1 onion sliced thick we slice them thick so the kids can pick them out easily if they want!
  • 1 can of diced tomatoes with green chilies rotel
  • 1 cup red wine vinegar
  • 1 cup water
  • 1 teaspoon minced garlic
  • 1 Teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • Place the roast in the crockpot.

  • Add everything else on top.

  • Cook on low in your crockpot for about 6 to 8 hours.

  • Shred the beef with 2 forks and stir. Let the flavors combine for about 30 more minutes in the crockpot before you serve.

  • Serve with tortillas or on rice!

  • Enjoy!
